Take advantage and grill all the hot dogs and hamburgers you can eat! While the grill is running though, think about these other things you can put on your grill, and consider giving them a try! </p> <p> &nbsp; </p> <h3> 1. Watermelon Steak </h3> <p> That's right! The core idea is very simple, but it might not be something you would think of. Some call it watermelon steak, and others just call it 'grilled watermelon.' At a bare minimum, all that is necessary is a watermelon, olive oil, and salt. You can <a href="https://thestayathomechef.com/cilantro-lime-grilled-watermelon/">take it to another level with lime juice</a>&nbsp;but the key is grilling for long enough to get the grill marks. They have been around since the 1930's, and there are many recipes. They all include chocolate chips, of course, and most have flour and butter and the usual ingredients, but they don't always have the secret ingredient: Time. </p> <p> No, not <a href="https://en.wikipedia.org/wiki/Thyme">thyme</a>, time. </p> <p> You may call it 'aging' the dough, or 'resting' it, or 'chilling' it, but you will also call it 'delicious.' </p> <p> It gained popularity in a New York Times <a href="http://www.nytimes.com/2008/07/09/dining/09chip.html">article</a> which said that aging the dough means "allowing the dough and other ingredients to fully soak up the liquid - in this case, the eggs - in order to get a drier and firmer dough, which bakes to a better consistency." It also concentrates flavor in the dough. The result is that the dough gets darker and gains a toffee-noted, complex flavor. You make the dough Monday at 10pm, you bake it Wednesday at 10am. </p> <p> Lucky for us, there is a compromise, to get most of the benefit with a lot less time. I mean, who can wait 36 hours with cookie dough in the fridge? I bet it would all get eaten as dough. </p> <p> 'Research' has shown that as little as 30 minutes of resting the dough can help improve the cookies, but the easiest way to maximize the technique is to make the cookie dough in the evening, and leave it overnight. Rest it as long as you can, but don't feel the need to get to the full 36 hours unless you're a die-hard cookie fan. </p> <p> What do you think? Would you try it? Here's another one for you: browning the butter! </p> <p> Browning butter evaporates water out of the butter, so the flavor gets more concentrated. The butter also starts to carmelize, building a nutty flavor that goes great on anything you traditionally use butter for. Cookies or other desserts get an extra interesting boost from the browned butter, or you can use it to top veggies, or fish or pasta, or of course, toast. Give it a try! </p> <p> &nbsp; </p> <p> How-to: </p> <p> 1. Cut butter into even pieces to help them melt faster. Add to saucepan (a light color for the saucepan will help if you have one). </p> <p> 2. Melt butter on medium heat. Bring it to a boil.&nbsp; </p> <p> 3. Once butter is boiling, stir constantly, until you see the butter turn brown. There will be foam, this is normal. When you see the butter turn brown, remove from heat. </p> <p> 4. In fact, I often get more than I think I'll eat fresh, because I know I'll end up using this recipe to make delicious&nbsp;banana bread! </p> <p> I love banana bread, so I have tested many recipes, and this is the one I found to be the best!&nbsp; </p> <p> &nbsp; </p> <p> <strong>Ingredients</strong> </p> <p> 2 cups flour </p> <p> 1 tsp baking soda </p> <p> 1/4 tsp salt </p> <p> 1/2 cup butter (room temperature) </p> <p> 3/4 cup brown sugar </p> <p> 2 eggs (room temperature) </p> <p> 2 mushy bananas </p> <p> (optional) chocolate chips or walnuts to your preference </p> <p> &nbsp; </p> <p> <strong>Instructions</strong> </p> <p> 1. Preheat the oven to 350F. Grease a 9x5 loaf pan. </p> <p> 2. In a large bowl, combine flour, baking soda, and salt.&nbsp; </p> <p> 3. In a separate bowl, cream together butter and brown sugar. This will be a lot easier with room temperature butter. Stir in mashed bananas and blend until well combined. Stir in eggs, just enough to incorporate.&nbsp; </p> <p> 4. Preheat oven to 500F and put a pizza stone in if you have one.</p> <p>2. Mix the mozzarella and feta together with a fork in a medium bowl. Make a little well in the middle and add an egg. Beat the egg with the fork, and mix into the cheeses.&nbsp;</p> <p>3. Lightly flour your work space. Put pizza dough on the floured surface and cut in half, then round the halves back into rough balls.</p> <p>4. Put a piece of parchment paper out and flour it lightly. Press and use a rolling pin to roll one of the balls into a round, 1/8-inch thick, 10-inch across. Slide it onto parchment paper and then slide it onto a baking sheet. Repeat for second ball of dough.&nbsp;</p> <p>5. Spoon half of cheese mix onto the first round of dough, up to 1/2-in from the edge but mostly in a big pile in the middle. Roll the sides up tightly to make it look like a boat of cheese (see picture). Pinch ends together and twist to seal. Repeat with the other round of dough.</p> <p>6. Slide the two khachapuris onto a pizza stone if you have one, or keep on baking sheets. Leave a few inches of space between them if you try to fit them onto one pizza stone or baking sheet. Bake at 500F for 8 minutes, turn khachapuris around to cook evenly. Cook for another 4 minutes and then crack an egg on top of&nbsp;each khachapuri and continue to bake until egg starts to turn white (~3mins) but yolk is still raw.&nbsp;</p> <p>7. Move khachapuris to a serving platter and top each with a 1tbsp pat of butter. Stir egg into cheese so it continues to cook. Heat oil in large skillet over medium-high heat. Add onion, salt, and pepper, saute until golden brown (~8mins).</p> <p>2. Add garlic, paprika, cumin, cinnamon, and ginger and stir for 1 minute. Add broth and bring to a boil.</p> <p>3. Sprinkle chicken with salt and pepper, add to skillet. Add lemon wedges, cover, and reduce heat to medium low. Simmer until chicken is cooked through (25-30mins), turning occasionally.</p> <p>4. Transfer chicken to platter. Add olives and juice squeezed from the remaining lemon, to skillet. Increase heat to high. Boil uncovered for about 5 minutes to thicken the sauce. Season with salt and pepper to taste.</p> <p>5. Pour sauce over chicken and serve. It's delicious, it keeps, it goes on a lot of things, and this recipe is as easy to remember and easy to do as any recipe you'll ever see.</p> <p>Even better, it's a great way to use the fresh, homegrown strawberries we have right now!</p> <p><img alt="" src="https://www.niagaraproduce.com/content//homegrown%20strawberries.jpg" style="width: 300px; height: 169px;" /></p> <p><strong>Ingredients:</strong></p> <p>1/2 cup butter</p> <p>1/2 cup powdered sugar</p> <p>4 fresh strawberries</p> <p>&nbsp;</p> <p><strong>Instructions:</strong></p> <p>1. Chop strawberries until very small. The smaller the chop, the easier to spread later.</p> <p>2. Blend together softened butter and powdered sugar. This recipe has slightly more ingredients than usual, and it has a few more steps, but the end result is a pro-level fish that will impress anyone! That's why Cilantro Chili Lime Glazed Salmon on Green Beans is our May Recipe of the Month!</p> <p><br /> <img alt="" src="https://www.niagaraproduce.com/content//glazed_salmon_green_beans.jpg" style="width: 400px; height: 200px;" /></p> <p><span style="font-size:10px;">Thanks to <a href="http://www.delish.com/cooking/recipes/a46234/cilantro-chili-lime-glazed-salmon-and-green-beans-recipe/">Delish</a> for the image and idea.</span></p> <p>Ingredients:</p> <p>4 pieces of salmon (~2lbs)</p> <p>3 tbsp extra virgin olive oil</p> <p>2 tsp minced garlic</p> <p>1 jalapeno, minced</p> <p>4 limes, for juice</p> <p>3 tbsp brown sugar</p> <p>1lb green beans, cut in 2 inch pieces</p> <p>1/4 cup cilantro, chopped</p> <p>Salt and pepper</p> <p>&nbsp;</p> <p>Instructions:</p> <p>1. Season salmon with salt and pepper, set aside</p> <p>2. In a small sauce pan on medium-low heat, add olive oil, garlic, jalapeno, and 1 tsp of salt. Saute for 2 minutes until garlic has softened.</p> <p>3. Add lime juice and brown sugar and stir constantly. Once sauce begins to bubble, reduce heat to low. Stir until sauce turns into a thin glaze (~6mins). Remove from heat and set aside.</p> <p>4. Preheat a large cast iron skillet over high heat. Heat 1 tbsp olive oil until very hot, almost smoking. Sear salmon on each side for 4 minutes. Transfer salmon to a plate and let it rest.</p> <p>5. In large skillet, bring 1/4 cup water and 1tsp salt to a boil. Add green beans, cover and cook until beans are tender (~4-5mins). Drain excess water.</p> <p>6. Reheat glaze on low and add cilantro. It's quick and simple, so you can make it after a quick visit to Niagara Produce after work! Try it and see the delicious results for yourself!</p> <p><img alt="" src="https://www.niagaraproduce.com/content//basil-chicken-tomatoes.jpg" style="width: 360px; height: 360px;" /></p> <p>&nbsp;</p> <p>Ingredients:</p> <p>4 large tomatoes</p> <p>1 deli-roasted chicken</p> <p>1 avocado, halved, peeled, and sliced</p> <p>1/4 cup olive oil</p> <p>1 lime (cut to be used for lime juice)</p> <p>1/2 cup fresh basil leaves</p> <p>Salt and pepper to taste</p> <p>&nbsp;</p> <p>Instructions:</p> <p>1. Cut tomatoes into wedges. Use forks to pull chicken meat from bones and shred into large pieces. Discard bones and skin (or use for soup!)</p> <p>2. Separate tomatoes onto 4 dinner plates, then pile chicken and avocado slices on top. Drizzle with olive oil, and squeeze lime juice over top.</p> <p>3.
